I'm planning to manual backup my old server recordings by slaving the HDD to my windows computer. Is this safe to do?

If you mean physically installing the hard drive in the windows PC and copying the files, no that will not work. Windows does not understand the file system format used by Linux.
You would be better using WinSCP to transfer the files across your network between the machines.
